Enabling
As you’re watching a movie / TV show in Plex you can pause it and see a navigation bar. One of the buttons (looks like two sliders) is the Playback Settings
From the Playback Settings you can choose a subtitle file from the list.
Adding New
If you are unable to find the correct subtitles for the show you’re watching, you can search for better subtitles within the app.
At the bottom of the list of subtitles there is a “Search” button. Use this feature to add another subtitle file to what you’re watching.
Setting Defaults
You can make subtitles be on by default in the Plex app.
Go to: Settings > Player > Burn Subtitles
Set to: Always
